- 2 cans pinto beans (15.5 oz. each - do not drain)
- 1 can black beans (15.5 oz. each - do not drain)
- 1 whole yellow onion, large dice
- 1 whole green or red pepper, large dice
- 2 cups pancetta, diced
- ½ cup ketchup
- ¼ cup molasses
- ¼ cup dark brown sugar, lightly packed
- 1 Tablespoon red wine vinegar (or apple cider vinegar)
- 1½ teaspoons dry mustard
- 1 teaspoon Worcestershire Sauce
- ½ teaspoon pepper
- 1 dash Tabasco sauce or pinch of cayenne (optional)
Preheat oven to 325°F
In a medium sauce pan add pinto beans and black bean. Bring to a low boil. Let cool, drain off bean juice. Reserve 1/2 cup of bean juice for the sauce. In a large skillet add 2 tablespoons olive oil and heat over medium until warm. Add the diced onion and green/red pepper and cook until the onions are translucent, or about 5 minutes.
Add pancetta to the onion and peppers. Cook until pancetta is evenly browned and set aside.
SAUCE: In a medium bowl, combine ketchup, molasses, brown sugar, red wine vinegar, dry mustard, pepper, and reserved bean juice. Stir together and set asideOptional: For an extra kick add a dash of Tabasco sauce or pinch of cayenne. In a 3.5 quart Dutch oven, or a large baking dish, add a layer of beans to the bottom. Next, add a layer of pancetta mixture and spread evenly over the beans. Continue to layer until complete. You will have about 4 individual layers. Evenly pour the sauce mixture over the top of layered beans and pancetta.
Cover and bake for 45 minutes. Remove from oven, uncover, and bake for an additional 20 minutes.
Remove from oven, stir to combine, and serve.
